Healthy Vegan Nacho Cheese Recipe
Nacho cheese, at least as it’s served at the movies today, is a hydrogenated chemical soup not fit for Warrior consumption, or human consumption in general. But Chef Joy gives us a superior tasting and healthy option that is sure to become a favorite savory snack at your social gatherings.
Ingredients:
Cheese Base:
1 cup raw macadamia nuts, soaked 8 hours, rinsed & drained
1 tablespoon nutritional yeast
1 teaspoon organic turmeric powder
dash cayenne pepper
1/4 to 1/2 teaspoon sea salt
3 tablespoons fresh squeezed lemon juice
Water (add as needed to reach desired consistency)
Fresh salsa
2 cups ripe tomatoes
3/4 cup loosely packed cilantro leaves
1/2 to 1 teaspoon minced jalapeno (seeded)
3 tablespoons lime juice
1/4 tsp sea salt
Eat with veggie chips (mandoline sliced)
This recipe is best with raw macadamia nuts soaked for 8-10 hours, rinsed and drained, but roasted. Dry nuts also work. Blend nuts, turmeric, cayenne, salt, water, and fresh lemon juice in the Vita-Mix until creamy. The mixture warms as it blends. Add extra water if you prefer a thinner consistency. Stir in fresh salsa to desired spice level.
